RECIPES FROM GRANDMA: Ep. 4 - Steamed whole fish

This is the first fish recipe that I learned how to make when I was a kid, and still remembers the easy steps to this day! Also a great dish for the upcoming Lunar New Year, which will make you look like a pro
Rub the cod or halibut with salt and cooking wine and let it sit for 5 minutes. Place the slices of ginger underneath and above the fish and steam for 8 minutes on boiling water.
While steaming, make the sauce and chop the scallions into strings and set aside.
When the fish is steamed, pour out the water residue in the bottom of the plate, and decorate the top with scallion.
Heat the oil with garlic until browning, and pour over the scallion, and pour over the sauce. Then heat up extra oil again at smoking point, which you should see smoke steaming, and then pour, here you should hear it sizzle.
Enjoy over rice!
