Easiest Hainanese Chicken (Instant Pot)

The easiest Hainanese Chicken made in an instant pot. This recipe uses an instant pot to create a flavorful and tender chicken dish, complete with a unique ice bath technique for a desired texture.
1. Saute the chicken fat with a bit of oil and add in the ginger, galangal, and lemongrass for 1 minute.
2. Add in water (enough to cover the chicken) and bring to a boil.
3. Prepare a large bowl with cold water and ice, big enough to fit the whole chicken.
4. Soak the whole chicken in the boiled water for a quick 5 seconds, then immediately remove it and soak it in the ice water for 5 seconds. Repeat this process 3 times in total.
5. When done, place the chicken in the instant pot and add turmeric for coloring.
6. Start the instant pot on 'saute' mode and cook until you see bubbles forming on top. Then, turn off the power and let the chicken soak in the water for an hour.
7. After an hour, take out the chicken and give it one last ice bath for 2 minutes.
8. Chop up the chicken and enjoy!
