A unique twist on chocolate chip cookies, featuring a soft mochi center. These cookies offer a texture similar to marshmallows but are made with less sugar for a healthier treat.
For the mochi dough: Mix together the glutinous rice flour and granulated sugar. Gradually stir in the water until the mixture forms a smooth batter. Cover the bowl with plastic wrap and microwave on high for 1 minute. Stretch the dough a couple of times when cooled.
For the chocolate cookie dough: Cream together unsalted butter and brown sugar until light and fluffy. Beat in the eggs and vanilla extract. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the flour mixture to the butter mixture and mix until just combined. Fold in the chocolate chips.
Assembly and Baking: Take small portions of the cookie dough and flatten them. Place a small ball of mochi inside the flattened cookie dough and fold the cookie dough around it to fully encase the mochi. Bake at 350F for 15 minutes.
