1. Boil the potato for 15 minutes with a pinch of salt in the water until fork tender. Drain and set aside. 2. In a pan, heat up the cooking oil and add in pork belly and onion until pork turns golden. 3. Add in the potato, sauté until slightly golden, then add in cooking wine, soy sauce and let it absorb for 2-3 minutes. 4. Finally, add in dried shrimp and scallion, mix well and enjoy.
