For the Buns: Combine all the dough ingredients (250g bread flour, 100g whole milk, 50g heavy cream, 3g yeast, 30g sugar). Once fully incorporated, mix in 20g butter for another 10 minutes. Let the dough sit for 1-2 hours until it doubles in size. For the Coffee Filling: Meantime, make the coffee filling by melting 20g butter and combining it with 20g bread flour, 40g sugar, and 10g instant coffee powder. Assembly and Baking: Cut the risen dough into equal slices and roll into round shapes, approximately 45g each dough piece. Let these shaped buns rise again until doubled. Pipe the coffee filling on top of the dough. Bake at 350°F for 25 minutes.
